Discover the sumptuous flavors of BBQ Chicken & Pineapple Tacos! To enter into the art of the Prepared follow the directions below. Or how about a savory barbecue chicken mixed with a slightly sweet pineapple, wrapped in a taco shell? Your taste buds are in for a treat.


  • For the Chicken:
    1 lb boneless, skinless chicken breasts or thighs, sliced into strips

  • 1/2 cup of your preferred BBQ sauce (smoky, sweet, or spicy – take your pick!)

  • 1 tbsp olive oil

  • 1/2 tsp paprika

  • 1/4 tsp garlic powder

  • Salt and pepper to taste

  • For the Tacos:
    8 corn tortillas

  • 1/2 cup freshly chopped pineapple

  • 1/4 cup thinly sliced red onion

  • 1/4 cup chopped cilantro

  • Lime wedges

  • Optional toppings: shredded cheese, avocado slices, sour cream, salsa


  • Step 1: Marinate the Chicken:
    In a large bowl, combine BBQ sauce, olive oil, paprika, garlic powder, salt, and pepper. Ensure your strips of chicken are well-coated and then add them to the frying pan.
    Cover and store in a refrigerator for at least thirty minutes, or overnight for a deeper taste.
  • Step 2: Grill to Perfection:
    Preheat the grill to medium-high heat. Skewer chicken strips or place them directly on the grill. Grill for 4-5 minutes per side or until fully cooked.
    Meanwhile, grill pineapple slices for a few minutes per side, until you get a nice caramel.
  • Step 3: Assemble and Relish:
    Heat tortillas according to package directions. Top a whole grain roll with grilled BBQ chicken, pineapple, red onion, and cilantro.
    Squeeze a lime wedge over the top and add your favorite toppings and you’re having a taco party fit for the king!


  • Coat the pineapple pieces on one side with some of the sauce and grill.
  • Take leftover chicken and pineapple and chop it into slices for salads, wraps, and bowls.
  • No grill? No problem! Place the chicken and pineapple inside an oven heated to 400°F and cook for 15-20 minutes until done.
