Ingredients

  • 2 cups cooked cold rice (preferably day-old)

  • 4 large beaten eggs

  • 1/2 cup washed and roughly chopped baby spinach

  • 1/4 cup chopped onion

  • 2 minced garlic cloves

  • 1 tablespoon soy sauce

  • 1 tablespoon sesame oil

  • 1/2 teaspoon ginger powder

  • 1/4 teaspoon black pepper

  • Optional pinch of red pepper flakes

  • Optional garnish: sesame seeds and chopped scallions

Directions

  • Prep and Scramble (5 minutes):
    Heat sesame oil in a wok or large skillet over medium heat. Ensure the oil coats the bottom.
    Add onions and cook until soft and transparent (three minutes).
    Stir your onion on one side so that you can add the beaten eggs. Toss the cook for 2 minutes while scrambling.
