Ingredients

  • 2 large sweet potatoes, peeled and diced

  • 1 can (15 oz) black beans, drained and rinsed

  • 1 red onion, finely chopped

  • 2 cloves garlic, minced

  • 1 tablespoon olive oil

  • 1 teaspoon ground cumin

  • 1 teaspoon smoked paprika

  • Salt and pepper to taste

  • 8 small tortillas

  • Toppings: Avocado slices, fresh cilantro, lime wedges

Directions

  • Step 1: Roasting the Sweet Potatoes:
    Heat the oven to 400°F (200°C). Combine diced sweet potatoes with olive oil, cumin, smoked paprika, salt, and pepper and toss with a fork. Spread out into a single layer on a baking sheet. 25-30 mins bake, until golden and tender. Stir once halfway through.
  • Step 2: Sautéing the Black Beans:
    Sautee chopped red onion and minced garlic in skillet on medium heat until softened. Add the black beans and simmer 5-7 minutes. Allowing the flavors to meld. Season with salt and pepper to taste.
  • Step 3: Assembling the Tacos:
    Warm the tortillas, and spread on the roasted sweet potatoes and black bean mixture. Add sliced avocado, chopped cilantro, lime juice.
