Ingredients
2 cups (200g) flattened rice flakes (Poha)
2 tablespoons vegetable oil
1 teaspoon mustard seeds
1 teaspoon cumin seeds
1 medium onion, finely chopped
1-2 green chilies, finely chopped (optional)
1 medium potato, boiled and diced (optional)
1/2 teaspoon turmeric powder
Salt to taste
A handful of chopped coriander leaves
1 lemon, juiced
Directions
- Step 1: Rinse and Soak the Poha
Rinse the poha thoroughly in a colander using a running cold water until the water is clear. It removes excess starch and makes them uniformly cooked.
Then soak the rinsed Poha in enough water to cover them for 5-10 minutes to soften, allowing it to absorb as much moisture that gives Poha a soft, light, and fluffy texture. - Step 2: Spice Tempering
Heat vegetable oil in a medium-sized pan or wok over medium heat. Add mustard seeds and cumin seeds, letting them sizzle for a few seconds until aromatic. - Step 3: Sauted onions and green chillies (optional).
Introduce finely chopped onions and green chilies (if using) to the tempered spices. Sauté the onions until translucent and soft. - Step 4: Add Turmeric Powder and Potatoes (Optional)
Sauté the onions and then add turmeric powder to coat it on them. Firstly, if using potatoes, place the boiled and diced potatoes into the frying pan and stir gently until well done. - Step 5: Drain and Add the Poha
Drain the soaked Poha and add them to the pan with sautéed onions and spices. Gently mix to combine. - Step 6: Season and Garnish
Add salt to taste, adjusting according to preference. Ensure even seasoning by thorough mixing. - Step 7: Add Lemon juice and Coriander leaves.
Adds lemon juice on hot Poha and gently stirs. Lastly, add chopped fresh coriander to create a fresh burst of flavor and aroma.

- Enhance flavor by adding a pinch of hing (asafoetida) to the tempered spices.
- Increase spiciness with extra green chilies or a dash of red chili powder.
