  • 400g boneless chicken cubes

  • 6-8 garlic cloves, peeled

  • 1 inch ginger, chopped

  • 2 green chilies, chopped

  • Handful of green coriander

  • 5-6 curry leaves

  • 1 tsp coriander seed

  • 1/2 tsp fennel seed

  • 2 tsp mulgapodi

  • 1/2 cup chana dal, soaked

  • 2 tsp fresh cream

  • 2 eggs

  • 30ml milk

  • 1 cup breadcrumbs

  • Salt to taste

  • Frying oil


  • Step 1: Blend the Chicken:
    Combine chicken cubes, peeled garlic cloves, chopped ginger, green chilies, coriander leaves, curry leaves, coriander seed, fennel seed, mulgapodi, soaked chana dal, and salt. Blend until smooth. Add 2 tsp of fresh cream and blend for an additional 1-2 seconds.
  • Step 2: Form the Chicken Donuts:
    Grease your hands with oil to shape the chicken mixture into donuts. Refrigerate for 10-15 minutes to let the flavors meld.
  • Step 3: Prepare the Batter:
    Whisk 2 whole eggs with 30ml of milk. Coat the donuts in the egg wash and breadcrumbs.
  • Step 4: Fry the Donuts:
    Heat oil to medium-high. Fry donuts for 3-4 minutes per side until golden brown and crispy.
  • Step 5: Drain and Serve:
    Remove donuts and drain on paper towels.
