Ingredients

  • 1 kg chicken, cut into pieces

  • 2 large onions, finely chopped

  • 1 small tomato, cut into pieces

  • 1/4 cup mustard oil

  • 1 and a half inches of ginger

  • 10 garlic cloves

  • 1 stick of cinnamon

  • 5 cloves

  • 10 black paper cons

  • 1 teaspoon turmeric powder

  • 2 teaspoons Kashmir red chili powder

  • 1 tablespoon coriander powder

  • 1 teaspoon cumin powder

  • 1 teaspoon garam masala

  • 1 teaspoon Everest meat masala powder ( optional)

  • Salt to taste

  • Fresh coriander leaves for garnish

Directions

  • Step 1: Marination:
    Marinate the chicken with salt, 1 tsp of lemon juice, and turmeric powder. Let it sit for at least 30 minutes to allow the flavors to penetrate the meat.
  • Step 2: Making the Paste for Gravy:
    Combine chopped onions, chopped ginger, and garlic into a mixer jar and grind into coarse paste.
  • Step 3: Preparing the Gravy:
    Heat mustard oil in a large sauce pan. Add cinnamon stick, cloves and kasmiri red chili powder then chopped onions and sauté them until they turn yellowish. Afterward,
    add the paste to the pan and sauté for 5-6 minutes.
    then add chopped tomatoes sauté until the oil rises from the puree.
  • Step 4: Incorporating Spices:
    Add Everest Meat Masala Powder (for better taste), coriander powder, cumin powder, and garam masala. Allow the spices to cook for a minute, releasing their aromatic essence.
  • Step 5: Adding the Chicken:
    Introduce the marinated chicken and cook until it’s well coated with the spice mixture.
  • Step 6: Simmering to Perfection:
    After that, cover the pan, lower heat, and cook until the chicken becomes tender and well done. This makes the flavors come together to give a lovely curry.
